freckled bananas

  Do you often have bananas that look like this????
 and don't have to make banana bread,
   and the kids won't eat the bananas
   once they have freckles.

   Take your freckled bananas, put them in a plastic
   container or ziploc bag and freeze them...yep just
   freeze them.  When you schedule allows you the
   time to bake, the bananas haven't gone bad.
   Bring the bananas back to room temperature,
   then begin  your recipe as normal.

molasses drop cookies

Here's an old fashioned flavored cookie, hope you enjoy them.
They are tender and moist, and pack a lot of flavor in every bite.
But ya...just can't eat one.

Molasses Drop Cookies
1 3/4 cup almond flour
3 tablespoons potato starch
1/4 brown sugar
1/4 sugar
1 teaspoon ginger
1/2 teaspoon baking powder

3 tablespoons molasses
2 eggs
1 tablespoon canola oil

2/3 cup raisins

mix wet ingredients, add dry to them.
make drop cookies using a  heaping teaspoon of batter,
and a butter knifeto remove the batter from the spoon
bake 350 on parchment 12-14 minutes

the gingerbread man

Do you have a child that just loves to help you in the kitchen, or is at the point where they can start baking on their own. I have a very cute and simple recipe to have fun with.
I use a special gingerbread pan, but you can try your hand at carving this simple shape if you can't find the pan. Great snow day project!!!!!

Gingerbread Man

1/3 cup milk plus 3 tablespoons
3 eggs
1/2 cup brown sugar
1 tablespoon molasses
1 teaspoon ginger
1/8 teaspoon ground clove
1/8 teaspoon mace
1/8 teaspoon nutmeg
1/4 teaspoon cinnamon
1 1/4 almond flour
1/4 tapioca flour
1 teaspoon baking powder
place all wet ingredients in bowl, mix, add spices, then add dry ingredients.
spray gingerbread pan with cooking spray.
bake @ 350 for 10 minutes

cool then ice

Icing
2 oz cream cheese (soft not melted)
4 tablespoons butter (soft not melted)
1 teaspoon vanilla
2 cups confectioners sugar
2 tablespoons milk

mix icing in food processor, or use hand mixer
use decorator tip and piping bag to place icing on gingerbread man.
decorate with colorful candy......Yummy

Pumpkin Tea Cakes and Donut Holes








Pumpkin Tea Cakes and Donut Holes
 2 treats with one batter
recipe makes 6 pumpkin teacakes and 16 donut holes

1 1/2 cups almond flour
1/2 cup potato starch
2/3 cup sugar
1/ teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 pinch ground clove
1/4 cup half and half
1/4 cup canola oil
2 eggs
1 cup pumpkin

pre-heat over 325
spray all pans with cooking spray (pam)

mix all wet ingredients then add all dry ingredients, just blend with a fork.

bake bundt for 25-30 minutes
bake donut holes for 20 minutes
cool  both before decorating

filling for pumpkins
1 cup confectioners sugar
1 oz cream cheese
2 tablespoons butter
1 tea vanilla

1 teaspoon of filling for each pumpkin, save the remaining frosting to tint green
 for pumpkin leaves and stems

Tint remaining frosting
3 drops green
1 drop yellow

Orange glaze
1 - 1 1/4 confectioners sugar
1 teaspoon vanilla
2 tablespoons water
2 drops of red food coloring
4 drops of yellow food coloring

glazes the pumpkins, with the remaining glaze

glaze the donuts holes, and sprinkle with coconut
( finely unsweetened organic coconut )

coconut grass to place pumpkins on, this just coats my plate
to make the pumpkins look like they are in a field

1/2 cup coconut
2 drops green food coloring
1 drop yellow food coloring

gluten free donut holes

My donut holes and quick and easy to make. If your hanging and around watching tv and ya just want something to eat, these just might fill that hunger. Kids with love them in their lunch box, great for parties too.
If your like me, it's been years since I had a donut....they were pretty good.
Hope you enjoy them.

gluten free donut holes

2/3 cup almond flour
1/3 cup sugar
1 teaspoon baking powder
1/8 teaspoon salt
1/2 teaspoon mace
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 egg
2 tablespoons half and half 
2 tablespoons canola oil
1 teaspoon vanilla

3 tablespoons sugar and 1/2 teaspoon cinnamon to roll 
donut holes in.....

mix with a fork
spray donut hole pan with cooking spray

preheat oven 350 bake for 15 minutes
recipe makes at least 16 donut holes

tropical zucchini snack cake

Tropical Zucchini Snack Cake

This ain't your grandmothers zucchini bread.  This recipe has the great texture and has the moister of a carrot cake,
wth the tropical additions of pineapple and coconut.

1 1/4 cup almond flour
1/2 cup of tapioca flour
2 tablespoons flax
1/4 teaspoon salt
3/4 cup sugar
1 1/2 teaspoon baking powder
3 eggs
1/2 cup oil
1 teaspoon vanilla
1 tablespoon rum ( if you choose not to use rum and 1 more teaspoon vanilla)
1/3 cup coconut
1 cup zucchini
4 rings of pineapple (diced - to look like crushed pineapple)

combine eggs, oil, sugar, vanilla in a bowl, mix with hand mixer, add flax. then let rest a few minutes.
next add dry ingredients. then add coconut, zucchini and pineapple.

bake in a 8x8 grease and dust with potato starch if your have it, I use potato starch like flour.
bake 325 for 55 minutes   due to the moist ingredients check to make sure snake cake in done.
 cool , then cover and refrigerate when done.
Great for lunch boxes, at cook outs and picnices.

gluten free peanut butter nut chip cookies

Large gluten free cookies....great to take on the go.
I call these mall cookies, because if you have ever been at the mall, and passed Mrs. Fields Cookies.
And wanted a cookie so bad, but you had to walk by because they don't sell anything gluten free.
With my mall cookie recipe you don't have to feel that way any more, make this recipe, pack them and go!!!

Gluten Free Peanut Butter Nut and Chip Cookie
1/2 cup peanut butter
1/2 cup of shortening
1/2 cup sugar
3/4 cup brown sugar
1 egg
1 teaspoon vanilla
1 cup almond flour
2 tablespoon ground flax
3/4 cup tapioca flour
1/2 teaspoon baking powder
3/4 baking soda
1 cup lightly salted peanuts
1 cup semi sweet chip
mix peanut butter, shortening and both sugar, until creamy with a hand mixer, add egg and vanilla.
next add all the dry ingredients, until well blended.
add chip and nut last stir with a spoon at this point.  
            


Bake 350 for 14 minutes  this will make 18 large 3 inch cookies
