
With Mother's Day just a week away. I thought I'd share with you one of
my favorite gluten free muffins. So you can serve mom breakfast in bed.
Little kids love trying to surprise mom on this special day.
Dads this recipe is super simple, give it a try, if the kiddies are too small.
Don't forget the home make cards, camera and Kleenex.
Gluten Free Blueberry Toaster Cakes
2 1/2 cups almond flour
2/3 cup tapioca flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
blend these ingredients with a fork
next add
2 teaspoons vanilla
2 eggs
1/3 cup sour cream
1/3 canola oil
1 1/2 - 2 cups blueberries ( frozen works fine)
mix well with a fork
spray muffin top pan with pam
bake at 350 for approx 18 minutes
makes 12 muffin tops
store in Ziploc bags for a quick snack on the run.
