Potato Pancakes are a family favorite !!!!
Four generations in my family have made potato pancakes
( my grandmother, mother, daughter, and I), we usually make them from left over plain mashed potatoes........But I have recreated this recipe to be gluten free, and without having to have leftover mashed potatoes.
But trust me if you end up liking this recipe every time you have leftover mashed potatoes you'll want to make them.
If you use leftover mashed potatoes gently warm in the microwave, they will blend better. Make sure mixture isn't hot or your eggs will begin to cook in the mixture.
6 med potatoes
boil until fork tender,
add 2 tablespoons butter
a pinch of salt
1/4 cup of sour cream
set mixture aside and cool,
when mixture is at room temperature
add 1/4 cup tapioca flour
blend with fork
add 2 slightly beaten eggs
head frying pan with at least 1/2 in canola oil, med to med high heat
drop mixture by tablespoons into oil, flatten a little
pancakes will fry better if you keep them small in size
approx 2 inches, makes 25 - 27 small pancakes
fry until golden brown
I enjoy them with maple syrup, other just like butter.
