gluten free eggplant roll ups

Eggplant Roll Ups .....are a great pasta substitute.

Sure I occasionally have gluten free pasta ...but not often.
I stay away from most grains. When I first went gluten free, not having Italian food was a big void for me.

I love tomato sauce!!!! more than pasta....
Eggplant roll ups are great for a light meal with a fresh garden salad,
or serve them as your pasta coarse for a dinner party.....

No one ever feels they are eating gluten free at my house........ hope you enjoy them.

Tomato Sauce
1 can tomato puree 28 0z
1 can diced petite tomatoes 28 0z
3 cups water
1 teaspoon sugar
1 1/2 teaspoon McCormick Italian Herb Seasoning
1/4 teaspoon Oregano
1 Pinch Crushed Red Pepper Flakes
2 Tablespoons Olive Oil

Cook over med to med high heat ...just until it starts to bubble
lower to simmer, cook for a few hours.

I recommend you start your sauce first.

Gluten Free Eggplant Roll ups

Start with one medium side eggplant, wash and peal.
Slice the eggplant length wise, approximately 1/8 of an inch thin.

Layer sliced eggplant in colander, sprinkle with salt,
press eggplant, ( I do this by placing a small dish on the eggplant then add some form of weight on the plate, I use a can of tomatoes),this will reduce the bitterness, the eggplant will sweat.

I usually let the eggplant sit for an hour. Pat dry with paper towels.

Coating Mixture
mix equal parts almond flour
with tapioca flour....set aside

Egg Mixture
beat 3 eggs add about 2 tablespoons water....set aside

Take one strip of eggplant dip it in the egg mixture, then the coating mixture.

Fry over med to med high heat, do not crowd pan. Repeat until your have finished.

Filling Mix
1 lb pound ricotta cheese
1 cup mozzarella
1 beaten egg

Spoon one heaping table spoon of mixture on eggplant strip, then roll.
place in baking dish. Line baking dish will eggplant rolls, then cover with sauce.

bake 350 for 35 minutes top with mozzarella cheese, bake only until melted.
