Gluten Free Carrot Cake Cupcakes

Some recipes you just have to create for spring.....and Carrot Cake is one of those recipes for me.
It's usually what I make for desert for Easter.

Gluten Free Carrot Cake

grate 8oz of baby carrots in the food processer - set aside

3/4 cup canola oil
3/4 cup sugar
1 teaspoon vanilla
3 eggs
mix well then add

1 teaspoon baking powder
1/2 teaspoon sale
1 teaspoon cinnamon
2 1/2 cup almond flour
1 cup tapioca flour

add in grated carrots

when all these ingredients are mixed well add
1 cup walnuts
1 cup coconut
1 /3 cup raisins

bake at 350 for up to 55 minutes

I made 12 cupcakes and one small bundt cake

let cool then frost with cream cheese frosting

Cream Cheese Frosting
2 cups confections sugar
3 oz cream cheese
1/2 stick of butter
1 teaspoon vanilla

combine all ingredients in the food processor
use pastry bag and pipe out a decorative design
