Deviled Eggs with a kick

Posted by Picasa

With in a week or so, many of you will have hard boil egg in your refrigerator, left over from Easter.
My kids used to love to color Easter eggs when they were small,
but I don't remember anyone wanting to eat them.
It was alway more of an art project.
This year lets prevent all those pretty colored egg from going to the land fill.

Here's my gluten free deviled egg recipe.

Deviled Eggs With A Kick

1 dozen eggs hard boiled
4 tables spoons gluten free mayo
1 teaspoon white balsamic vinegar
2 teaspoons creamy horse radish ????? check to make sure it's gluten free
or substitute 1/2 teaspoon plain horse radish
2 teaspoons mustard (sunny yellow kind)
1/4 teaspoon jalapeno powder
sprinkle with salt and pepper

garnish
cherry tomatoes
green onion
paprika

boil eggs, let cool, peel, then slice in 1/2
I used a fancy ruffle cutting tool, that you would make crinkle fries with,
but you can just use a knife.

remove all the yoke centers place in a bowl, add all other ingredients,
mix with hand mixer, or pulse in food processor,

place filling in pipping bag, as if you were decorating a cake,
fill eggs and garnish, I used small pieces of cherry tomatoes, and chopped green onion,
then sprinkle with chili 3000 for penzey or paprika

hope you enjoy an other recipe
