I love this time of year, the weather starts to get warmer, and the food is fresher.
I was inspired to create this plum tart when I saw the sweet juicy plums in the store, at
a great price. I do try to use what is on sale, and what is in season.
You will find my plum tart pretty easy to make, the hardest part is cutting the fruit thin and evenly.
You can get away with eating my plum tart for breakfast, like coffee cake,
or serve as a light summer desert.

1 cup sugar
1/2 cup light brown sugar
1/2 cup canola oil
2 teaspoons almond extract
1 1/2 cups almond flour
1/2 cup tapioca flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon cinnamon
2 tablespoons melted butter
(4) additional tablespoons melted butter set aside
3 plums (sliced thinly and pitted, skins remain on)
grease two 8 inch cake pans
line with freezer paper or parchment
with the addition melted butter pour 1/2 in each pan,
then line the pan evenly with fruit
pour batter on top, don't disturb the fruit,
it may take a few minute for all the batter to settle and cover the fruit,
bake at 350, for 45 - 55 minutes
the tart should start to come away from the sides
when done baking turn out on to a plate fruit side up.
