This roast beef is pretty simple to make. I was inspired to use some of the fresh herb growing in my back yard. We spend a lot of time searching for gluten free bread we'll like, put I think we over look, simple things like lunch meat.
We just can't take the risk of cross contamination, if the bologna containing gluten, is sliced on the same deli machine as the roast beef that doesn't contain gluten.....So I make my own lunch meat, here's my Recipe.
Gluten Free Herb Crusted Roast Beef
1/2 of a eye of the round ( roast beef)
1/3 cup chopped chives
8-10 leaves of basil (sliced sliver thin)
5 leaves parsley (sliced sliver thin)
2-3 cloves chrushed garlic
1 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1/8 cup olive oil
pre-heat oven to 450
place small amount of olive oil in pan just to coat, so the meat will not stick.
place meat in pan, put mixture on roast rub some on the side.
bake @450 for 10 minutes, reduce heat to 250, continue cooking about another 2 hours - 2 1/2 hours
or until desired done-ness
my roast had just a small amount of pink left to the meat.
other serving suggestion, do a large roast for a buffet.
