I thought I'd post a recipe that would go with the herb crusted roast beef.
and I just loved them. This is my take on an old recipe.
Italian Green Beans
clean and cook at least 2 cups of green bean
boil until fork tenter
in separte pan add
1 table spoon canola oil
1/3 cup diced green bell pepper
1/8 cup diced hot italian pepper (delete if you don't like hot food)
1/4 cup diced onion
1 clove of garlic minced
saute until vegetables are soft
2 cups of diced tomatoes
1/2 teaspoon sugar
1/2 teaspoon Italian grinder by McCormick
1 table spoon olive oil
sprinkle with salt and pepper to taste
cook over med heat until tomatoes start to breakdown
stir occasionally this will take at least an hour
drain cooked green beans, add them to tomato mixture and serve.
