Gluten Free Zucchini Nut Muffins

With summer here, and all the veggies getting ready to be pick. Zucchini is one of the first veggies to come out of the garden. I don't think I know anyone that garden, that doesn't end up with more zucchini, than they know what to do with. Zucchini bread is an old fashion recipe, I thought I'd give a make over and make it gluten free.

Zucchini Nut Muffins

3 eggs
1/2 cups canola oil + 1 table spoon
3/4 cup sugar
1/2 brown sugar
1 teaspoon vanilla

2 cups almond flour
2/3 cup tapioca flour
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
1 cup shredded zucchini ( squeeze moisture out in paper towels)
1 cup raisins

mix wet ingredients, then add dry ingredients, then zucchini, nuts and raisins

bake at 350 for 45 - 50 minutes
makes 12 -16 muffins depending on the size
