gluten free carrot latkes


Gluten Free Carrot Latkes

Started when a good friend of my, who celebrates Hanukkah gave me a bag of tri colored carrots,
beautiful shades of red, orange and yellow.  Normally she make them out of potatoes, and they're great tasting, but I'm trying to rotate my food selection more, to try to avoid future sensitivities to foods.
The back ground flavor of my Carrot Latkes were inspired my carrot cake.  You will find these latkes enjoyable for breakfast.

Gluten Free Carrot Latkes
5 - 6 Carrots Shredded  ( 3cups) squeeze dry with paper towels
2 tablespoons almond flour
1 tablespoon tapioca flour
1 tablespoon sugar
1/4 teaspoon salt
stir with fork set aside

1 egg slightly beaten
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
mix egg, cinnamon, and nutmeg together, pour over carrot mixture, combine well.

Over medium to medium high heat, place non-stick frying pan, with approx 1/8 inch of oil in bottom of pan.

Place table spoon of mixture in frying pan, don't over crowd the pan, fry only 3 or 4 at a time.
Cook one side until it is crispy, then flip and do the other side.

I drizzle with maple syrup and sprinkle with raisin when I serve them.
