Christmas Cookie Time

Now that we have Thanksgiving behind us,
All I can think about is,
coming up with new gluten free
Christmas cookie recipes.

As you can see I have already started.
My newest recipe is a big soft ginger cookie.

I have packaged them up in batches of 6,
all my guest will be getting
cookie favors at the table this year.
I love... when they bite into them,
and can't believe they're gluten free..

These cookie bags are a great idea to make sure your cookies
don't get cross contaminated.
during your gluten free holiday.


Don't forget to leave some big soft gluten free ginger cookies out for santa,
he'll be getting plenty of gluten at the other houses,

Gluten Free Big Soft Ginger Cookies

4 cups almond flour
1 cup plus 2 tablespoons tapioca flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground gloves
1/4 teaspoon salt
1/4 cup crisco
1/2 cup margarine soften ( I used country crock)
1 cup white sugar
1 egg
1 tablespoon water
1/4 cup molasses

4 tablespoons white sugar to roll cookies in

In large bowl, crean together margarine and sugar,
and crisco until light and fluffy,
add beaten egg, water and molasses,
then add dry ingredients.

shapen in to balls about 3/4 of an inch to an inch.
roll in sugar, press the ball slightly when you
place on cookie sheet, about 2 inches apart.

Preheat oven to 350
Bake on ungressed cookie sheet 12 - 14 minutes for soft cookies
14- 16 minutes for a crisper cookie.

allow to cool on cookie sheet for 5 minutes before removing
to a wire rack to cool completely.
