gluten free onion fennel crackers


Posted by PicasaMy gluten free onion fennel crackers remind me of a keebler cracker I used to eat.
These crackers I served alone side the minestrone soup mix........From Mixes from the Hearland.
We can be like Sandra Lee from the food net work. Get some help from the grocery store, and do some of the dinner home made.

Onion Fennel Crackers
1 1/2 cups almond flour
1 teaspoon baking soda
1 teaspoon minced dry onion (pulse in small food processor, or spice mill, )
         or you could use 1 teaspoon onion powder
1 teaspoon ground fennel
1/4 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon sugar
1 table spoon olive oil
1/4 cup mozzarella cheese
1 egg

mix all ingredients in food professor,
use 2 pieced of freezer paper to roll crackers, waxy side toward the cracker mixture.
so let me go over this carefully ....place one piece of freezer paper on the counter waxy side up.
place mixture on that piece of freezer paper...cover with another piece of freezer paper waxy side to touch
the mixture.  Roll cracker out about 1/8 inch ..no more that 1/4 inch
Remove top piece of freezer paper cut cracker with knife or cookie cutter, while still on bottom piece of
freezer paper.  Move freezer paper with crackers onto a cookie sheet.

dough is moist and cutting with a knife will be the easiest way.   Removing dough from around the cutter isn't easy.  I used a rectangle cutter so the crackers shared sides leaving no excess to remove.

Bake 350 for 12 minute....do not let the crackers turn brown ..they will taste burnt.
