Pumpkin Tea Cakes and Donut Holes

Pumpkin Tea Cakes and Donut Holes
 2 treats with one batter
recipe makes 6 pumpkin teacakes and 16 donut holes

1 1/2 cups almond flour
1/2 cup potato starch
2/3 cup sugar
1/ teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 pinch ground clove
1/4 cup half and half
1/4 cup canola oil
2 eggs
1 cup pumpkin

pre-heat over 325
spray all pans with cooking spray (pam)

mix all wet ingredients then add all dry ingredients, just blend with a fork.

bake bundt for 25-30 minutes
bake donut holes for 20 minutes
cool  both before decorating

filling for pumpkins
1 cup confectioners sugar
1 oz cream cheese
2 tablespoons butter
1 tea vanilla

1 teaspoon of filling for each pumpkin, save the remaining frosting to tint green
 for pumpkin leaves and stems

Tint remaining frosting
3 drops green
1 drop yellow

Orange glaze
1 - 1 1/4 confectioners sugar
1 teaspoon vanilla
2 tablespoons water
2 drops of red food coloring
4 drops of yellow food coloring

glazes the pumpkins, with the remaining glaze

glaze the donuts holes, and sprinkle with coconut
( finely unsweetened organic coconut )

coconut grass to place pumpkins on, this just coats my plate
to make the pumpkins look like they are in a field

1/2 cup coconut
2 drops green food coloring
1 drop yellow food coloring
