gluten free banana muffins

Banana bread and muffins are one of my favorite muffins.  I remember as a kid loving slices of banana bread with cream cheese.  To this day if I have to plan a special occasion like a bride show.  I still make little tea sandwiches out of banana bread.  This recipe only contains almond flour, at this point I'm still staying away from tapioca flour.  I think it contributes to inflammation so for now I'm leaving it alone.

Gluten Free Banana Muffins
2 small bananas
1 cup of sugar
1/4 cups sour cream
2 eggs
2 tablespoons melted butter
1 teaspoon vanilla
1/2 teaspoon baking soda
2 cups almond flour

Mash bananas, add sugar then eggs, sour cream. butter and vanilla. then mix in baking soda and almond flour.
this mixed pretty easy you could do it with a fork. Line cupcake pan with papers, scoop batter out with ice cream scoop.  This will make 12 muffins
Bake at 350 for 45- 50 minutes longer if needed
