Gluten Free Baked Potato Soup
This is my new favorite soup, I had it yesterday for St. Patrick's Day, and I'm thinking about making it for Easter.
6 baked potatoes peeled and cubed
2 tablespoons butter
2 tablespoons canola oil
1/2 onion diced
4 slice green onions ( leave one aside for garnish)
1/3 cup sour cream
1/3 cup cheddar cheese
5 cups milk
3 table spoons potato starch
5 slices of bacon (leave on aside for garnish)
1 teaspoon pensey fox point seasoning ( contains salt green pepper and shallots)
small about of sour cream and cheddar cheese for garnish
Sauté the onion and green onions in butter and canola oil, until tender, add fox point spice, potato starch and sour cream.
Gradually stir in milk whisking constantly until thickened. Stir in potatoes and cheese.
Bring to boil, keep stirring, it takes a while for the cheese to melt. Reduce heat simmer and simmer 10 minutes.
I garnished with sour cream, chopped bacon, sliced green onion and cheddar cheese.
I only garnish with bacon in case some didn't eat meat, but you can put the bacon in the soup.
