Gluten Free Blueberry Pancakes

Berry season is here.  Make Dad or your Grad breakfast in bed, with my gluten free blueberry pancakes.
Really any one would love these tender, berry pack pancakes. In just minutes you have a fancy looking
breakfast, decorates with additional berries, and powder sugar it you like.  ENjOY!!!

Gluten Free Blueberry Pancakes
1 cup almond flour
1/3 cup tapioca flour
3 tablespoons flax (ground)
3 tablespoons sugar
2 teaspoons baking powder
2 teaspoon vanilla
1/2 teaspoon salt
2 eggs
2 tablespoons canola oil
1/2 cup half and half or you could use milk

1 cup blueberries

Use a 8 inch frying pan on med to med high heat, don't let pan get to hot, pancakes will burn.
I use about 1/2 teaspoon of butter to coat frying pan for each pancake.
Place 1/2 cup of batter into frying pan. Place berries on top of pan cake. 12 berries if they are large,
16 berries if they are small. When pan cake starts to show bubbles on top, its time to flip, just a few minutes on the second side, and your done.  This recipe will make 5 good size pancakes, but for the little people in your life, you might like to make silver dollar size pancakes. This is also a great idea for brunch.
